Take a look at the final stage of image creation - pigmentation. The gelatine was impregnated with potassium dichromate and exposed to UV light over the positive image printed on transparent sheet. This caused the gelatin to harden in the more illuminated areas and when soaked in water, it will accept less pigment. The image is based on this principle.
